After an absense of a few weeks, i have just looked out the window and the deers back, must admit it looks a bit moth eaten, but hey its a great excuse not to do any gardening:beer:

VENISON PAN SAUSAGE
8 lbs. venison
4 lbs. fresh pork
1/2 c. salt
2 tbsp. black pepper
1 tsp. red pepper
A little brown sugar
A little rubbed sage for extra flavor - Optional

Add seasoning to meat; grind together and form into 1 pound rolls; wrap and freeze. Slice as needed.

VENISON OR BEEF STIR-FRY
2 lbs. venison or beef steak, cut across grain into 1/4 inch strips
2 tbsp. wine or beer
2 tbsp. soy sauce
1 tbsp. cornstarch
1/4 tsp. black pepper
1/4 tsp. powdered ginger
1/4 tsp. garlic powder
2 tbsp. oil
2 (6 oz.) pkg. frozen pea pods
1 c. sliced fresh mushrooms or 1 (8oz.) can sliced mushrooms
1 c. thin sliced carrots
1/2 to 1 c. thin sliced onions
1 (6 oz.) can sliced water chestnuts

Place meat in shallow pan. In small bowl, combine wine, soy sauce, cornstarch, pepper, ginger, garlic powder. Pour over meat. Marinate 1 hour at room temperature or in refrigerator overnight. When ready to cook, pour oil in wok and preheat to 375 degrees. Drain meat, reserve marinade. Place half of meat in hot oil and stir-fry for 3 minutes or until brown. Remove and add remaining meat and brown. Add onions and fry for 3 minutes. Push up side or remove. Add carrots and fry for 3 minutes. Add pea pods and fry until completely thawed. Add mushrooms and fry for 1-2 minutes. Add sliced chestnuts and fry for 1 minute. Return all fried ingredients to wok and add remaining marinade. Stir gently to combine all ingredients. Reduce heat to simmer. Simmer for 4 to 5 minutes or until heated through. Serve with rice or noodles.

Madman, i'm not sure how i would square killing a defenseless roe stag, with the ethics of an organic wildlife garden. Before it was cold, word would have got round the rest of the wildlife, that this is not the safe haven they thought and before you know it my garden would be devoid of anything more interesting than a slug. The end result would be that i would have to do some gardening:cry: now i have been cultivating my wildlife garden for the last 4/5 years, and have a wide range of creatures that visit me, to eat the brambles, nettles etc. The stag was devouring the bramble leaves along with a bit of grass, as i left for work, leaving the succulent daffs and primroses alone. Please please don't suggest killing the wee little beastie anymore, after all its taken over 15 years for one to come into my little garden. Also i can't bear the thought of having to do any gardening:smilie13: Mmmmmmmmmmm i wonder if i could charge a fee and let joe public come and see him, er following on from that i wonder if longleat has any spare critters:beer:

:icon_cool ive got a million tadpoles that we can strike up a deal for ,, but you will have to tart up the deer a bit by the sound of it ,,,any way try & gain its trust then you might be able to hire it out next xmas,,:icon_cool :icon_cool

Lucky my next door neighbour has a big pond, and i have loads of frogs and toads hopping around all over the place, nice idea though about hiring him out for xmas, will have to try and catch him and train him to harness, hey thinking about it i could hire him out to you fishermen to carry your gear when going on a bit of a hike. Provided the payment was in stella of course:beer:
